A DELIGHT BEYOND EID: TWISTED KNAFEH

What better way to continue the culinary celebration than with a feast that leaves your guests in awe? As Nestlé Professionals, we know the importance of keeping your menus fresh and exciting. That's why we're suggesting a unique twist to one of this Eid’s most beloved Arabic desserts: The Knafeh.

This innovative dessert serves four and combines the rich flavors of a local Middle Eastern dessert with a syrup soaked spun pastry, offering a fusion of traditional and contemporary tastes. The recipe utilizes our NESTLÉ® cream and NESTLÉ® Sweetened
Condensed Milk®, along with our NESTLÉ® SCM Squeezy Pistachio, as well as other quality ingredients like pistachios and rose petals.

INGREDIENTS

For the spun pastry, you'll need:
•    200 g Knafeh dough
•    120 g butter

For the cream stuffing, you’ll need:
•    120 g mozzarella cheese
•    200 g NESTLÉ® cream
•    70 g NESTLÉ® Sweetened Condensed Milk®

And for the topping:
•    20 g NESTLÉ® SCM Squeezy Pistachio 
•    3 g Pistachio crushed 
•    1 g Petal rose 

METHOD

Pastry
Shape the knafeh dough in a stainless circle pan and top it with melted butter.
Bake in the oven for 8 minutes at 170°C until golden. 

Cream Stuffing 
In a small pot, add NESTLÉ® Cream and reheat.
Then add NESTLÉ® Sweetened Condensed Milk® and mozzarella cheese. 
Add rose water and blossom water on top. 

Assembly


Build your knafeh by having the first layer and top it with the cheese cream mixture. 
Top it with another layer and reheat in the oven for 3 minutes to ensure that all the cream reaches 40°C and that the cheese melts.
Then, Top it with a little more cream mixture, NESTLÉ® SCM Squeezy Pistachio, pistachio crushed, and rose petals.
