The Winter Ramadan Starter That Sets the Tone
Winter Ramadan is here. Hungry guests arrive cold from the evening chill. Iftar services demand precision timing. Your dishes need to offer warmth and comfort, starting with that first taste.
Here's the reality: your starter sets the tone for the entire iftar experience. Get it right, and everything that follows feels elevated. It also needs to hold well during service, scale without losing quality, and actually be practical during your busiest hours of the year.
This Khaleeji Shrimp & Tomato Soup delivers on all counts. It tastes satisfying, looks impressive, and makes your service smoother.
This recipe works for chefs looking to stand out this winter Ramadan. It feels traditional, signals quality, and preps ahead easily. With MAGGI® Khaleeji Seasoning and BUITONI® Tomato Coulis, this soup delivers consistent Gulf flavors and rich depth every single time. Plus, you're using every part of the shrimp, so nothing goes to waste.
- 1kg shrimp (with heads and shells on)
- 75g MAGGI® Khaleeji Seasoning
- 400g BUITONI® Tomato Coulis
- 60g ghee
- 1.5L water
- 16 pcs medium-sized shrimps (cleaned)
- 70ml olive oil
- 2g lime zest
- 10g fresh coriander leaves
-
1PREP THE SHRIMP:- Clean and devein the shrimps, save the heads and shells while separating the cleaned shrimp body.
-
2BUILD THE STOCK:- In a pot, heat the ghee and toss the shrimp heads and shells with half of the MAGGI® Khaleeji Seasoning.
-
3Once aromatic, add in the BUITONI® Tomato Coulis, water and bring to a boil. Keep on a gentle simmer for 20 minutes.
-
4Blend the shrimp and tomato mixture before passing it through a fine sieve. Collect smooth shrimp and tomato stock and keep aside.
-
5COOK THE SHRIMP:- Take the clean shrimp and season with remaining MAGGI® Khaleeji Seasoning and olive oil before cooking in a large pot.
-
6COMBINE:- Combine the smooth shrimp and tomato stock to the cooked shrimp, bring to a boil and let simmer for 2 to 3 minutes to allow the flavors to meld.
-
7TO SERVE:- Garnish the soup with lime zest and coriander leaves before serving hot.
Prep Ahead: The stock base can be made a day ahead and stored chilled. During iftar rush, you just cook the shrimp, combine, and serve. This saves critical minutes when every second counts.
Holds Well: This soup maintains flavor and texture at 75°C in a steam table for hours. The shrimp stay tender, the flavors stay vibrant.
Scales Easily: Need to serve 40 instead of 4? Just multiply the recipe. The ratios work at any volume.
Zero Waste: Using heads and shells means you're maximizing every gram of your shrimp purchase. Smart costing and full flavor.
Guest Impact: The aroma tells guests this is special. The depth of flavor proves it. And that lime zest finish? That's the detail they remember.
This is the winter Ramadan starter that sets the standard for everything that follows. With Nestlé Professional supporting your kitchen with consistent, reliable ingredients, you can focus on what matters: creating an iftar experience worth remembering.
