Ingredients:

  • 50g MAGGI® Professional Smoked Seasoning
  • 4.5kg Australian Beef Brisket
  • 50g Dijon Mustard
  • 120ml Corn Oil
  • 80g Carrots (Cut Round)
  • 80g Celery (Cut Round)
  • 60g Leeks (Cut Round)
  • 120g Red Onion (Cut in Quarters)
  • 60g Bunch of Garlic (Cut in Half)
  • 10g Rosemary Leaves
  • 10g Thyme Leaves
  • 7g Star Anise
  • 16g Cinnamon Sticks
  • 4g Laurel Leaves

 

Side:

  • 500g Carrots
  • 400g Mushroom
  • 500g Red Onion
  • 40g MAGGI® Smoked Seasoning
  • 80ml Olive Oil

 

Method:

Brisket

  1. Marinate the brisket in the mustard and corn oil, before rubbing it with the MAGGI® Professional Smoked Seasoning.
  2. In an oven tray, layer all the vegetables at the base as bouquet garni.
  3. Put a leveled grill on top of the vegetables in the tray and place the brisket on top.
  4. Bake the oven tray at 180 C for 20 minutes first.
  5. Cover the tray, first with butter paper and then with aluminum foil, and continue to bake at 150 C for 4 hours.

 

Side

  1. Chop the vegetables roughly, drizzle with olive oil and season with MAGGI® Professional Smoked Seasoning.
  2. Transfer in a new oven tray and roast in the oven at 180 C for 15 minutes.

 

Serving

On a serving platter, place sliced brisket and serve alongside the smoked roasted vegetables.
